Description

This wine owes its name to the Monaldeschi della Cervara, the noble family that previously owned the estate where this wine was born, Castello della Sala.

The history of the Cervaro della Sala, in turn, is closely linked to Renzo Cotarella, a long-time lover of Umbria and this territory’s potential for the production of white wines, who was hired in 1979 at the age of 26 as winemaker for the estate. We find ourselves in the Orvieto area, in fact, and the calcareous and clay-rich soil, rich in fossils and exposed to the rising sun, lent itself particularly well to the viticulture of white grape varieties.

Recently successful with Tignanello, the Antinori aimed to create a new wine that would overcome the typical weaknesses of white wines at the time: rapid ageing and the colour changing to amber. The point of reference was found in Burgundy, in conjunction with an on-site trip with the Marquis Piero Antinori: Corton Charlemagne was exactly the type of product that corresponded with their idea; therefore, Chardonnay was chosen as the right grape. After some unsatisfactory attempts, however, it was decided to combine it with Grechetto, an indigenous grape variety that was already widely used by the Antinori family in the other Castello della Sala wines, and which it was hoped would compensate the Chardonnay in terms of verticality, acidity and tannic texture, as well as conferring territoriality and authenticity.

After several experiments, the first vintage of Cervaro finally arrived in 1985, and with the amazing vintage of 1986 it was definitively consecrated as a new milestone in Italian oenology: it became the first Italian white wine to go through alcoholic and malolactic fermentation in barriques. Following a cold maceration process, with the grapes harvested at dawn, fermentation (for the Chardonnay) takes place in new barriques in contact with natural yeasts.

It penetrates the nose very pleasantly, with a bouquet of exotic fruit, citrus but also iodine notes, white pepper and vanilla. The palate, which is very deep, delights with great flavour and freshness, supporting the gustatory-olfactory texture with great persistence. All the conditions for excellent evolution in years to come are present.
