Vin Santo Occhio di Pernice 2005
Vin Santo is the best-known sweet wine from the Tuscan tradition, dating back to the Renaissance. To produce both Vin Santo and Occhio di Pernice, Avignonesi has always used the same yeast that has been handed down for generations, which gives it its ethereal flavour. During a lengthy ageing process, more than half of the precious liquid is lost.
One hundred percent a dense, alchemical and gentle blackthorn, its colour is reminiscent of raw garnet, mysterious and bewitching like its bouquet; complex and ample with hints of dates, dried figs, black cherries and candied citrus fruits, sweet spices, white pepper and chestnut honey.
In the mouth the sweetness is supported by freshness; it is spicy with hints of candied red fruits, plum preserves and an almost caramelised finish, with endless persistence. Every sip is a surprise, an explosion of feeling.
This elegant wood casket lends itself to being gifted on important occasions and allows you to taste this vintage twice, giving it time to evolve so you can fully grasp its surprising evolution.
