Dal Forno Romano
Romano Dal Forno comes from a family of winemakers by tradition and vocation.
A perfectionist at heart, he is the one who leads the change of course of the winery in the heart of the Verona area (Cellore d’Illasi) and who builds a farm where a workaholic rigor and a revolutionary method are put at the service of the search for perfection.
Among the many innovations of Dal Forno, the automatic grape ventilation system, which preserves the optimal conditions for drying and prevents the onset of mold and the hyper-technological management of the cellar. From the control of the tanks to their washing system, from the temperature to the punching times, in fact, everything is completely automated and in the absence of oxygen – by means of nitrogen, therefore – without the addition of sulfur.
From this mix of maniacal precision, experimentation, knowledge and respect for the territory and the grapes, the myth of Cantina Dal Forno was born, inextricably linked to Amarone and Valpollicella.
The family vocation was also passed on to the next generation. Today, in fact, they work alongside Romano and his wife, their sons Luca, Marco and Michele.
