Amarone della Valpolicella Classico is the highest expression of Valpolicella production, in this case interpreted with rigor, tradition and wisdom by the Allegrini family.
It is known, making Amarone is an art: this symbolic wine of Italian oenology has a high complexity of production, made of several steps and the need to grow and bring to harvest different grapes, often grown in several plots and vineyards. Beginning with the queen grape, Corvina, and its genetic relative Corvinone (which, although from larger bunches and berries brings finesse and balance), to complete with the gregarious grapes Rondinella and Oseleta, the first now downsized in percentages thanks to technology to protect the ?fruit trees? and the second increasingly appreciated for its polyphenolic intensity and suitability to produce concentrated wines.
Beyond the splendid ability to create the final blend, what is surprising is the skillful governance of all the steps before aging.
The passage in barrique is the signature of Franco Allegrini, an internationally renowned winemaker who wanted to break with the tradition of the large cask and introduce more intense but brief refinements, before moving the mass to the large cask and then concluding the refinement with a rather long period in the bottle before release to the public.
The final result is extraordinary: intense ruby tending to garnet in the glass, it reveals on the nose notes of dried violets, cherries in alcohol and blackberry jam, continuing with coffee, tobacco and dark chocolate, while in the mouth it is powerful, warm and soft, but also well balanced both thanks to well-smoothed tannins and an ever-present freshness, such as to tame the high alcohol content typical of this great wine, a classic that never ceases to amaze.
