It owes its name to the Monaldeschi della Cervara, the noble family that previously owned the estate where this wine, Castello della Sala, was born.

The history of Cervaro della Sala, on the other hand, is closely linked to Renzo Cotarella, who was hired in 1979 at the age of 26 as the estate’s winemaker and has always been a lover of Umbria and the potential of this land on white wine production. We are in the Orvieto area, in fact, and the vine with limestone and clay soil, rich in fossils and exposed to the sunrise, was particularly suited to the viticulture of white grape varieties.

Reduced by the recent success story of Tignanello, the idea of the Antinori house was to create a new wine that would make up for the typical weaknesses of white wines of that time: rapid aging and color change toward amber. The reference came from Burgundy, in conjunction with a trip there with Marquis Piero Antinori: the Corton Charlemagne was exactly the kind of product that responded to that idea; therefore Chardonnay was chosen as the grape variety to focus on. After a few unsatisfactory attempts, however, it was decided to pair it with Grechetto, an indigenous grape variety already widely used by the Antinori family in Castello della Sala’s other wines, and which would have compensated for the Chardonnay in terms of verticality, acidity and tannic texture, as well as giving the wine a territoriality, the right authenticity.

After several experiments, finally came the first vintage of Cervaro, 1985, and with the sensational 1986 vintage its definitive consecration as a new milestone for Italian enology: the first Italian white wine to carry out alcoholic and malolactic fermentation in barriques. Maceration is carried out cold, with the grapes harvested at dawn, and fermentation (for Chardonnay) in new barrels in contact with natural yeasts.

The nose penetrates, very pleasant, with a bouquet of exotic fruit, citrus but also iodine notes, white pepper and vanilla. The palate, very deep, delights us with great savoriness and freshness supporting the taste-olfactory texture with a long persistence. All the conditions are in place for a great evolution in the years to come.
