A wine that is symbol of Isole and Olena, the Cepparello marks the history of Chianti Classico area highlighting all the qualities of this specific terroir in peculiar times, when the myth of Chianti and its “untouchable” blend was still firmly rooted in its territory of origin, leaving little room for new interpretations of the ain grape of Tuscany.
Characterized by a production just over 40,000 bottles, the Cepparello is produced with Sangiovese grapes from around 35-year-old vines, planted on soils rich in marl with limestone and sandstone balances and exposed to the South-West, on hills located in about 400 meters above sea level.
After pressing and fermentation subject to frequent daily pumping over, the must macerates in contact with the skins for up to 28 days before racking and the consequent decanting into 1/3 new barriques (97% French wood, 3% American wood) for a period of 20 months, before bottling and the release to public.
In tasting the Cepparello shows a concentrated ruby red dress, introducing the nose to a large bouquet made of red plum and cherry with hints of raspberry and rose, then introducing undergrowth and earthy hints as well as sweet spices, finally tobacco and coffee. In the mouth it is direct, generous and enveloping, with an elegant and well integrated tannic texture, a present freshness and a mineral contribution that is clearly evident in the closing. The balance of softness is mastered, well supported by an alcohol content and an important role of glycerine.
The Cepparello is a certainty in the whole Tuscan and Italian wine scene, an ever-present wine and a reference for those looking for the true soul of Chianti, made up of an extreme territoriality, always sincere and reassuring, typical of a great wine.
