Vin de la Neu is the fruit of the experimental project of Nicola Biasi, an internationally renowned winemaker, who has untied himself from working in the winery with third parties, after having made several Italian companies great, to focus on his own project that is certainly ambitious but also scientifically relevant.

The decision to plant a “hardy” grape such as the Johanniter at more than 800 meters above sea level, where the famous Val di Non apples are typically grown but wine was already being made 150 years ago, in itself invites us to explore the topic in detail. Beyond the choice of a grape, the result of a crossbreed that today gives extraordinary results against cryptogams and fungal diseases, the very high density (16,600 plants per hectare), the bush-training system and the total absence of treatments in the vineyard, with all operations left to the manual dexterity of man, is also interesting.

Careful harvesting of the bunches kept separate for the two vineyard: the older one and the younger one. Always keeping the grapes separate, the pressing takes place and a first passage in vitrified concrete tanks, followed by fermentation in French oak barriques, new for the old vineyard and of second passage for the young one. Battonage for a few weeks and return to concrete to carry out the malolactic fermentation. Return to wood to refine for another 6 months, this time assembled. About a year and 8 months in the bottle before being put on the market.

In tasting Vin de la Neu presents itself with an intense, brilliant straw yellow color, introducing an olfactory bouquet where floral notes of lime and jasmine stand out, then lemon and ginger; in the background basil and green tea leaves. On the palate it is juicy, taut and vertical, with an acidity that cleanses the mouth well and a high flavor that closes the sip giving a high persistence. Drink now or let it age.

Vin de la Neu is a wine that initially arouses curiosity for the project behind it, for the research and difficulty of making it but which once discovered fascinates and permanently captures the taster.

Limited production of 886 bottles for the 2021 harvest.
